最受老饕歡迎的美國牛肉，牛五花牛火鍋片取自牛的胸腹部，由胸肉沿肋骨後緣除去前胸而成，亦稱牛雪花，含有豐富油脂，肉質鮮嫩卻不油膩，口感鮮甜入口即化，牛肉香氣十足。是燒烤、煮火鍋、涮涮鍋、壽喜燒的絕佳食材，清涮於80℃的滾湯中即可逼出牛肉的獨特香氣，此外用來煎、快炒也非常適合。
